For one or two people, you can microwave the potatoes (I zapped one new potato for 2 minutes) instead of boiling. I baked it in the toaster oven at 400 for 20 minutes or so and served with Greek yogurt mixed with chives, parsley, basil, salt and pepper.
To turn these things into a dinner, while the taters are baking sautee a bunch of veggies--I like onions, red bell pepper, zucchini and mushrooms--together in olive oil or butter, then sprinkle the veggies all over the taters, cover with shredded cheese and slide back into the oven long enough to melt the cheese.
