ORIGINAL PANCAKE HOUSE DUTCH BABY MADE AT HOME

4 eggs
1/2 cup of powdered sugar
3/4 cup all purpose flour
1/2 tsp salt
3/4 cup of heavy whipping cream
1/8th teaspoon nutmeg
1/4 cup of butter

Preheat Oven to 425 degrees.

Whisk eggs until blended. Stir in powdered sugar into the egg mixture and set a side.

Stir flour, salt and nutmeg together in a separate bowl.
Mix in cream to the flour mixture and mix with a fork. Then mix in eggs to the mixture.

Use a 9 inch skillet with an oven-proof handle. Melt 1/4 cup of butter in skillet and swirl around to coat the entire pan. With skillet still warm, pour in the batter to the skillet and then immediately place the skillet in the oven for 20-25 minutes.

Remove from the oven once the top edges are brown. Remove from skillet on to a large plate.

Top with butter, lemon and powdered sugar.

I see you have an original pancake house recipe here...I'm currently looking for their recipe for pumpkin pancakes, but not having a lot of luck. If you can be of assistance, I started a thread on the dope (by crazyjoe, "looking for a very pumpkiny pumpkin pancake recipe) I would appreciate it.

i woke up this morning craving a dutch baby from the original pancake house. i looked up their locations and there are none in manhattan :( so i decided to bake it myself. used your recipe and it turned out delicious! thanks for making my morning!

Pumpkin Pancakes
Ingredients
Mix in one bowl:
2 cups all-purpose flour
2 tablespoons brown sugar
1 tablespoon white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon table salt

Mix in another bowl:
1 cup pumpkin puree
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1 egg
1 1/2 cups milk
2 tablespoons vegetable oil
2 tablespoons lemon juice
2 teaspoon grated lemon zest

Combine and make pumpkin pancakes!

I've made this recipe a number of times but it never comes out the same as the restaurant's. My edges are more bread like that the resaurants and don't have the crispy/flakeyness. Any thoughts on how to get mine to come out more like the restaurant's??
